Ingredients:

For the roast beef:

  • 2 pounds boneless beef rib roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf

For the Yorkshire puddings:

  • 1 cup all-purpose flour
  • 1 large egg
  • 1 cup milk
  • 1 tablespoon melted butter
  • 1/2 teaspoon salt

For the gravy:

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup beef broth
  • 1/4 cup red wine
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

For the roasted vegetables:

  • 1 pound potatoes, peeled and quartered
  • 1 large onion, cut into wedges
  • 2 carrots, peeled and cut into chunks
  • 1 head of broccoli, cut into florets
  • 1 cup Brussels sprouts, trimmed
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Prepare the roast beef: Preheat oven to 450°F (230°C). Season the beef roast with salt and pepper. Heat the olive oil in a large roasting pan over high heat. Sear the beef roast on all sides until browned. Remove the roast from the pan and set aside.
  2. Make the Yorkshire puddings: In a bowl, whisk together the flour, egg, milk, melted butter, and salt. Pour the batter into a muffin tin. Bake in a preheated 450°F (230°C) oven for 20-25 minutes, or until puffed and golden brown.
  3. Roast the vegetables: Toss the potatoes, onion, carrots, broccoli, and Brussels sprouts with olive oil, salt, and pepper. Spread the vegetables in a single layer on a baking sheet. Roast in the preheated oven for 30-40 minutes, or until tender and slightly browned.
  4. Make the gravy: In the roasting pan used to sear the beef, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the beef broth, red wine, Worcestershire sauce, Dijon mustard, salt, and pepper. Bring to a simmer and cook for 5-10 minutes, or until thickened.
  5. Finish cooking the beef: Return the roast beef to the roasting pan and pour the gravy over it. Cover with foil and roast in the preheated oven for 15-20 minutes, or until the beef reaches your desired level of doneness.
  6. Serve: Serve the roast beef, Yorkshire puddings, roasted vegetables, and gravy. Enjoy!
