Recipe of Red Braised Pork Belly
Ingredients:
- 1 pound pork belly, skin removed
- 1 cup soy sauce
- 1/2 cup Shaoxing wine (or dry sherry)
- 1/4 cup rock sugar
- 1 tablespoon light soy sauce
- 1 tablespoon Chinese five-spice powder
- 1 cinnamon stick
- 1 star anise
- 3 cloves
- 1 bay leaf
- 2 cups water
Instructions:
- Prepare the pork belly: Cut the pork belly into large cubes.
- Make the braising sauce: In a large pot, combine the soy sauce, Shaoxing wine, rock sugar, light soy sauce, five-spice powder, cinnamon stick, star anise, cloves, and bay leaf. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Braise the pork belly: Add the pork belly cubes to the pot. Cover and simmer for 1.5-2 hours, or until the pork is tender.
- Finish the dish: Remove the pork belly from the pot and set aside. Skim off any excess fat from the braising sauce. Bring the sauce back to a simmer and cook until slightly thickened.
- Serve: Serve the braised pork belly with the thickened sauce.
