Ingredients:
- For the filling:
- 1 pound mashed potatoes
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg, beaten
- Salt and pepper to taste
- For the coating:
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- For the aioli:
- 1/2 cup mayonnaise
- 1/4 cup Dijon mustard
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions:
- Make the filling: In a large bowl, combine mashed potatoes, Parmesan cheese, parsley, egg, salt, and pepper. Mix well.
- Shape croquettes: Roll the potato mixture into small balls and set aside.
- Coat croquettes: Dredge each croquette in flour, then dip in beaten eggs, and finally coat in breadcrumbs.
