Recipe of Classic Amatriciana Pasta
Ingredients:
- 1 pound dried rigatoni or penne pasta
- 4 ounces guanciale, diced
- 1 onion, chopped
- 1 clove garlic, minced
- 1 (28-ounce) can crushed tomatoes
- 1/4 cup grated pecorino romano cheese
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Instructions:
- Cook pasta: Cook pasta according to package directions. Drain and set aside.
