Start your day off with a hearty and flavorful Italian breakfast. Classic Amatriciana Pasta is a classic Roman dish that features a rich tomato sauce made with guanciale (cured pork cheek), pecorino romano cheese, and chili flakes. The combination of savory flavors and tender pasta makes it a delicious and satisfying meal.

Recipe of Classic Amatriciana Pasta

Ingredients:

  • 1 pound dried rigatoni or penne pasta
  • 4 ounces guanciale, diced
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 1/4 cup grated pecorino romano cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions:

  1. Cook pasta: Cook pasta according to package directions. Drain and set aside.
  2. Fry guanciale: In a large skillet, fry guanciale over medium heat until crispy. Remove from skillet and set aside.
  3. Sauté onion and garlic: Add onion and garlic to the skillet and sauté until softened.
  4. Add tomatoes: Add crushed tomatoes, red pepper flakes (if using), salt, and pepper. Bring to a simmer and cook for 15-20 minutes, or until the sauce has thickened.
  5. Combine: Add cooked pasta and guanciale to the sauce. Toss to coat.
  6. Serve: Serve immediately, topped with grated pecorino romano cheese.
