Ingredients:

  • For the shrimp:
    • 1 pound shrimp, peeled and deveined
    • 1 tablespoon olive oil
    • 1 teaspoon chili powder
    • 1/2 teaspoon cumin
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper

  • For the guacamole:
    • 1 ripe avocado, mashed
    • 1/4 cup diced red onion
    • 1/4 cup chopped cilantro
    • 1 tablespoon lime juice
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper

  • For the tacos:
    • 8 corn tortillas
    • 1/4 cup shredded lettuce
    • 1/4 cup diced tomato
    • 1/4 cup pickled red onions

Instructions:

  1. Grill shrimp: Preheat grill to medium-high heat. Drizzle shrimp with olive oil and season with chili powder, cumin, salt, and pepper. Grill for 2-3 minutes per side, or until cooked through.
  2. Make guacamole: In a bowl, combine mashed avocado, red onion, cilantro, lime juice, salt, and pepper. Stir well.
  3. Warm tortillas: Warm tortillas on a griddle or skillet for 30 seconds per side.
  4. Assemble tacos: Place a spoonful of guacamole on each tortilla. Top with grilled shrimp, lettuce, tomato, and pickled red onions.
  5. Serve: Serve immediately and enjoy!
