Ingredients:

  • For the steak:
    • 1-inch thick steak (e.g., ribeye, sirloin)
    • 1 tablespoon olive oil
    • Salt and pepper to taste

  • For the chimichurri sauce:
    • 1/2 cup chopped fresh parsley
    • 1/4 cup chopped fresh cilantro
    • 2 cloves garlic, minced
    • 1/4 cup red wine vinegar
    • 1/4 cup olive oil
    • 1 tablespoon lemon juice
    • 1 teaspoon dried oregano
    • 1/2 teaspoon red pepper flakes

  • For the sides:
    • 1 pound potatoes, peeled and cut into wedges
    • 1 red bell pepper, sliced
    • 1/2 cup olive oil
    • Salt and pepper to taste

Instructions:

  1. Prepare steak: Season steak with salt and pepper.
  2. Grill or sear: Heat a grill or skillet over high heat. Add olive oil and sear steak for 3-4 minutes per side, or until desired doneness. Let rest for 5-10 minutes before slicing.
  3. Make chimichurri sauce: In a small bowl, combine parsley, cilantro, garlic, red wine vinegar, olive oil, lemon juice, oregano, and red pepper flakes. Stir well.
  4. Prepare sides: Toss potato wedges with olive oil, salt, and pepper. Roast in the oven at 400°F (200°C) for 20-25 minutes, or until golden brown and crispy. Grill or roast red bell pepper until slightly charred.
  5. Serve: Serve steak with chimichurri sauce, roasted potatoes, and grilled red bell pepper.
