Ingredients:

  • For the chicken:
    • 2 boneless, skinless chicken breasts
    • 4 slices ham
    • 4 slices Swiss cheese
    • 1 cup all-purpose flour
    • 2 large eggs, beaten
    • 1 cup breadcrumbs
    • Salt and pepper to taste

  • For the mushroom sauce:
    • 2 tablespoons butter
    • 1 onion, chopped
    • 8 ounces mushrooms, sliced
    • 1 cup chicken broth
    • 1/2 cup heavy cream
    • Salt and pepper to taste

Instructions:

  1. Prepare chicken: Pound chicken breasts to a thin, even thickness. Place a slice of ham and cheese on each chicken breast. Fold chicken over filling and secure with toothpicks.
  2. Coat chicken: Dredge chicken in flour, then dip in beaten eggs, and finally coat in breadcrumbs. Season with salt and pepper.
  3. Cook chicken: Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden brown and cooked through, about 10-12 minutes per side. Remove from skillet and set aside.
  4. Make mushroom sauce: In the same skillet, melt butter over medium heat. Add onion and sauté until softened. Add mushrooms and cook until browned. Stir in chicken broth and heavy cream. Simmer until sauce thickens. Season with salt and pepper.
  5. Serve: Serve chicken cordon bleu with mushroom sauce.
