Ingredients:

  • For the fish:
    • 1 pound white fish fillets (e.g., cod, tilapia), cut into strips
    • 1 cup all-purpose flour
    • 1/2 cup cornstarch
    • 1 teaspoon garlic powder
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 large egg, beaten
    • 1 cup milk
    • Vegetable oil for frying

  • For the avocado salsa:
    • 1 ripe avocado, mashed
    • 1/4 cup diced red onion
    • 1/4 cup chopped cilantro
    • 1 tablespoon lime juice
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper

  • For the tacos:
    • 8 corn tortillas
    • 1/4 cup shredded lettuce
    • 1/4 cup diced tomato
    • 1/4 cup pickled red onions

Instructions:

  1. Prepare fish: In a shallow bowl, whisk together flour, cornstarch, garlic powder, salt, and pepper. In a separate bowl, whisk together egg and milk. Dredge fish strips in flour mixture, then dip in egg mixture.
  2. Fry fish: Heat vegetable oil in a deep fryer or large pot to 375°F (190°C). Fry fish strips for 2-3 minutes, or until golden brown and crispy.
  3. Make avocado salsa: In a small bowl, combine mashed avocado, red onion, cilantro, lime juice, salt, and pepper. Stir well.
  4. Warm tortillas: Warm tortillas on a griddle or skillet for 30 seconds per side.
  5. Assemble tacos: Place a spoonful of avocado salsa on each tortilla. Top with crispy fish, lettuce, tomato, and pickled red onions.
  6. Serve: Serve immediately and enjoy!
