Pan-Seared Salmon with Mushroom Risotto

Ingredients:

  • For the salmon:
    • 1 pound salmon fillet
    • 1 tablespoon olive oil
    • Salt and pepper to taste

  • For the risotto:
    • 1 cup arborio rice
    • 1/2 cup white wine
    • 2 cups chicken broth
    • 1/4 cup grated Parmesan cheese
    • 1/2 cup chopped mushrooms
    • 1 clove garlic, minced
    • 1/4 cup butter
    • 1/4 cup heavy cream
    • Salt and pepper to taste

Instructions:

  1. Cook risotto: In a large saucepan, heat olive oil over medium heat. Add rice and cook for 1-2 minutes, stirring constantly. Add white wine and cook for 1 minute more. Gradually add chicken broth, one ladle at a time, stirring constantly until absorbed before adding the next ladle.
  2. Sauté mushrooms: In a separate skillet, sauté mushrooms and garlic in butter until softened. Add to the risotto.
  3. Finish risotto: Stir in Parmesan cheese, salt, and pepper. Cook for 1-2 minutes more, or until risotto is creamy.
  4. Cook salmon: Season salmon with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook salmon for 3-4 minutes per side, or until cooked through.
  5. Serve: Serve salmon over risotto.
