Ingredients:

  • For the salmon:
    • 1 pound salmon fillet
    • 1 tablespoon olive oil
    • Salt and pepper to taste

  • For the spinach:
    • 1 bunch fresh spinach
    • 1 tablespoon butter
    • 1 clove garlic, minced
    • Salt and pepper to taste

  • For the lemon caper sauce:
    • 1/4 cup capers, drained
    • 1/4 cup lemon juice
    • 2 tablespoons olive oil
    • 1 tablespoon Dijon mustard
    • 1/4 cup chopped fresh dill

Instructions:

  3. Cook salmon: Heat olive oil in a separate skillet over medium-high heat. Cook salmon for 3-4 minutes per side, or until cooked through.
  4. Make lemon caper sauce: In a small bowl, whisk together capers, lemon juice, olive oil, Dijon mustard, and dill.
