Ingredients:

  • For the roasted tomatoes:
    • 1 pint cherry tomatoes
    • 1 tablespoon olive oil
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
  • For the basil pesto:
    • 1 cup fresh basil leaves
    • 1/2 cup pine nuts
    • 1/4 cup grated Parmesan cheese
    • 1/4 cup olive oil
    • 1 clove garlic, minced
    • 1/4 cup extra-virgin olive oil
    • Salt and pepper to taste

  • For serving:
    • 1 ball of burrata cheese
    • Crusty bread, sliced
    • Fresh basil leaves

Instructions:

  1. Roast tomatoes: Preheat oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, and pepper. Roast for 15-20 minutes, or until slightly charred.
  2. Make pesto: In a food processor, combine basil leaves, pine nuts, Parmesan cheese, olive oil, garlic, salt, and pepper. Pulse until smooth.
  3. Assemble: Place a ball of burrata cheese on a serving plate. Top with roasted tomatoes and a generous drizzle of basil pesto.
  4. Serve: Serve immediately with crusty bread for dipping.
