Ingredients:

  • For the paella:
    • 2 cups arborio rice
    • 4 cups chicken broth
    • 1 tablespoon olive oil
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 1 red bell pepper, sliced
    • 1/2 cup green peas
    • 1/4 teaspoon saffron threads
    • Salt and pepper to taste

  • For the seafood:
    • 1 pound shrimp, peeled and deveined
    • 1 pound mussels, scrubbed
    • 1 pound clams, scrubbed
    • 1/2 pound squid, cleaned and cut into rings
    • 1/4 cup olive oil
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon paprika

Instructions:

  1. Heat pan: Heat olive oil in a large paella pan over medium-high heat.
  2. Sauté vegetables: Add onion and garlic to the pan and sauté until softened.
  3. Add rice and saffron: Add rice, saffron, and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until rice is tender and liquid has been absorbed.
  4. Cook seafood: In a separate skillet, sauté seafood with olive oil, garlic powder, and paprika until cooked through.
  5. Combine: Add cooked seafood to the paella and stir to combine.
  6. Let rest: Let the paella rest for 5 minutes before serving.
