Recipe

Ingredients:

  • For the ceviche:
    • 1 pound mixed seafood (shrimp, scallops, octopus, or fish)
    • 1/2 cup lime juice
    • 1/4 cup orange juice
    • 1/4 cup diced red onion
    • 1/4 cup chopped cilantro
    • 1 jalapeño pepper, minced
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper

  • For the tostadas:
    • 12 corn tortillas
    • Vegetable oil for frying

  • For the toppings:
    • Avocado, diced
    • Pico de gallo
    • Shredded cabbage
    • Crispy fried onions

Instructions:

  1. Make ceviche: In a bowl, combine seafood, lime juice, orange juice, red onion, cilantro, jalapeño pepper, salt, and pepper. Let marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  2. Fry tostadas: Heat vegetable oil in a large skillet over medium-high heat. Fry tortillas until golden brown and crispy.
  3. Assemble tostadas: Top each tostada with a spoonful of ceviche. Add avocado, pico de gallo, shredded cabbage, and crispy fried onions.
  4. Serve: Serve immediately and enjoy!
