Ingredients:

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric  
  • 1/4 teaspoon red chili powder
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup coconut milk
  • 1/2 cup water
  • Salt and pepper to taste
  • Cooked rice
  • Pita bread
  • Fresh cilantro for garnish

Instructions:

  1. Heat the oil: Heat the olive oil in a large pot over medium heat.
  2. Sauté onion and garlic: Add the chopped onion and garlic to the pot and cook until softened.
  3. Add spices: Stir in the ground cumin, coriander, turmeric, and red chili powder. Cook for 1 minute.
  4. Add tomatoes: Add the diced tomatoes and cook for 5-7 minutes, or until the tomatoes break down.
  5. Add chickpeas: Stir in the chickpeas and coconut milk. Bring to a simmer and cook for 10-15 minutes, or until the chickpeas are heated through and the sauce has thickened.
  6. Season: Season with salt and pepper to taste.
  7. Serve: Serve the chickpea curry with cooked rice and pita bread. Garnish with fresh cilantro.
