Ingredients:
- For the lentil curry:
- 1 cup dried red lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 can (14.5 oz) coconut milk
- 1 cup vegetable broth
- Salt and pepper to taste
- For the bowl:
- 1 cup cooked rice
- 1 avocado, sliced
- 1/4 cup tortilla chips
- Fresh spinach or arugula
- Sliced red chili peppers (optional)
Instructions:
- Cook lentils: Rinse and pick over lentils. In a large pot, combine lentils, onion, garlic, curry powder, cumin, coriander, coconut milk, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender. Season with salt and pepper to taste.
