Buddha Bowl with Lentil Curry, Avocado, and Tortilla Chips

This colorful and balanced meal features a creamy lentil curry, fresh avocado, crunchy tortilla chips, and a bed of leafy greens. It’s a perfect option for a healthy and delicious breakfast or lunch.

Recipe

Ingredients:

  • For the lentil curry:
    • 1 cup dried red lentils
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 1 tablespoon curry powder
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1 can (14.5 oz) coconut milk
    • 1 cup vegetable broth
    • Salt and pepper to taste

  • For the bowl:
    • 1 cup cooked rice
    • 1 avocado, sliced
    • 1/4 cup tortilla chips
    • Fresh spinach or arugula
    • Sliced red chili peppers (optional)

Instructions:

  1. Cook lentils: Rinse and pick over lentils. In a large pot, combine lentils, onion, garlic, curry powder, cumin, coriander, coconut milk, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender. Season with salt and pepper to taste.
  2. Assemble bowl: Divide cooked rice into bowls. Top with lentil curry, avocado slices, tortilla chips, spinach or arugula, and sliced chili peppers (if desired).
