Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 pound mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 (28-ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 8 slices bread, cubed

Instructions:

  1. Preheat oven: Preheat your oven to 375°F (190°C).
  2. Sauté vegetables: Heat olive oil in a large skillet over medium heat. Add onion and sauté until softened. Add mushrooms and garlic, and cook until mushrooms are browned.
  3. Combine ingredients: In a large bowl, combine crushed tomatoes, oregano, basil, salt, and pepper. Add sautéed vegetables and stir to combine.
  4. Layer casserole: In a 9×13 inch baking dish, layer bread cubes, tomato mixture, and mozzarella cheese. Repeat layers until ingredients are used up, ending with a layer of mozzarella cheese.
  5. Bake: Bake in preheated oven for 30-35 minutes, or until bubbly and golden brown. Sprinkle with Parmesan cheese and let cool for a few minutes before serving.
