Master the Art of Coq au Vin: A Timeless French Chicken Stew Recipe

Recipe of Coq au Vin

Ingredients:

  • 1 whole chicken, cut into pieces
  • 1 pound button mushrooms, sliced
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 1 bottle (750 ml) red wine
  • 1 cup chicken broth
  • 1 tablespoon flour
  • 1 tablespoon butter
  • 1 bay leaf
  • Salt and pepper to taste

Instructions:

  1. Brown the chicken: Season the chicken pieces with salt and pepper. Heat a large pot or Dutch oven over medium-high heat. Add the chicken pieces and brown on all sides. Remove the chicken from the pot and set aside.  
  2. Sauté vegetables: In the same pot, add the butter and sauté the onion, carrots, and garlic until softened.
  3. Deglaze the pan: Add the flour to the pot and stir to coat the vegetables. Cook for 1 minute.
  4. Add wine and broth: Pour in the red wine and chicken broth. Bring to a boil, then reduce heat and simmer for 1 hour, or until the chicken is tender.
  5. Add mushrooms: Add the mushrooms to the pot and simmer for an additional 15-20 minutes, or until the mushrooms are tender.
  6. Season and serve: Season with salt and pepper to taste. Serve hot with crusty bread.
