Ingredients:

  • For the curry:
    • 1 cup dried chickpeas, soaked overnight and rinsed
    • 1 onion, chopped
    • 2 cloves garlic, minced
    • 1 tablespoon curry powder
    • 1 teaspoon ground cumin
    • 1/2 teaspoon ground turmeric
    • 1 can (14.5 oz) coconut milk
    • 1 cup vegetable broth
    • Salt and pepper to taste

  • For the garnish:
    • 1/4 cup roasted pistachios
    • Fresh cilantro leaves

Instructions:

  1. Cook chickpeas: In a large pot, combine chickpeas, onion, garlic, curry powder, cumin, turmeric, coconut milk, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until chickpeas are tender. Season with salt and pepper to taste.
  2. Garnish: Top with roasted pistachios and fresh cilantro leaves.
