Ingredients:

  • 1 pound penne pasta
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 pound cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions:

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside.  
  2. Sauté the mushrooms: Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened. Add the mushrooms and cook until browned. Stir in the garlic and cook for 1 minute more.
  3. Make the sauce: Pour the heavy cream into the skillet with the mushrooms. Bring to a simmer and cook for 2-3 minutes, or until the sauce thickens. Stir in the Parmesan cheese and season with salt and pepper.
  4. Combine and serve: Add the cooked pasta to the skillet with the creamy mushroom sauce. Toss to coat. Serve immediately, garnished with fresh basil leaves.
