Recipe

Ingredients:

  • For the filling:
    • 1 pound mashed potatoes
    • 1/2 cup grated Parmesan cheese
    • 1/4 cup chopped parsley
    • 1 egg, beaten
    • Salt and pepper to taste

  • For the coating:
    • 1 cup all-purpose flour
    • 2 large eggs, beaten
    • 1 cup breadcrumbs

  • For the aioli:
    • 1/2 cup mayonnaise
    • 1/4 cup Dijon mustard
    • 1 clove garlic, minced
    • 1 tablespoon lemon juice
    • Salt and pepper to taste

Instructions:

  1. Make the filling: In a large bowl, combine mashed potatoes, Parmesan cheese, parsley, egg, salt, and pepper. Mix well.
  2. Shape croquettes: Roll the potato mixture into small balls and set aside.
  3. Coat croquettes: Dredge each croquette in flour, then dip in beaten eggs, and finally coat in breadcrumbs.
  4. Fry: Heat oil in a deep fryer or large pot to 375°F (190°C). Fry croquettes until golden brown and crispy, about 3-4 minutes per side.
  5. Make aioli: In a small bowl, whisk together mayonnaise, Dijon mustard, garlic, lemon juice, salt, and pepper.
  6. Serve: Serve croquettes with aioli sauce.
