Recipe

Ingredients:

  • For the crepes:
    • 1/2 cup almond flour
    • 1/4 cup coconut flour
    • 2 large eggs
    • 1/4 cup unsweetened almond milk
    • 1 tablespoon melted butter
    • 1/4 teaspoon vanilla extract
  • For the toppings:
    • Fresh berries (raspberries, blueberries, strawberries)
    • Sliced peaches or nectarines
    • Whipped cream

Instructions:

  1. Make the crepes: In a bowl, whisk together almond flour, coconut flour, eggs, almond milk, melted butter, and vanilla extract until smooth. Let the batter rest for 10 minutes.
  2. Cook the crepes: Heat a nonstick skillet over medium heat. Pour a small amount of batter into the skillet and swirl to create a thin layer. Cook until golden brown on both sides. Repeat with the remaining batter.
  3. Assemble: Place a crepe on a plate. Top with fresh fruit, whipped cream, and a drizzle of honey (if desired).
  4. Serve: Repeat with the remaining crepes and enjoy!
