Mie Ayam: Indonesian Chicken Noodle Soup

Mie ayam is a popular Indonesian noodle dish that’s perfect for a comforting and satisfying meal. This flavorful soup features tender chicken, egg noodles, and a variety of vegetables in a savory broth. It’s a classic dish that’s loved by people of all ages.

Recipe

Ingredients:

  • For the broth:
    • 1 chicken carcass
    • 1 onion, quartered
    • 1 carrot, chopped
    • 1 stalk celery, chopped
    • 1 tablespoon soy sauce
    • 1 teaspoon ground ginger
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 3 cups water

  • For the noodles:
    • 1 package egg noodles

  • For the toppings:
    • 1/2 pound chicken breast, shredded
    • 1/4 cup chopped green onions
    • 1/4 cup shredded cabbage
    • 1/4 cup fried shallots
    • 1/4 cup chicken meatballs (optional)
    • 1/2 teaspoon chicken seasoning powder

Instructions:

  1. Make the broth: In a large pot, combine chicken carcass, onion, carrot, celery, soy sauce, ginger, salt, and pepper. Add water and bring to a boil. Reduce heat and simmer for 1 hour, or until broth is flavorful. Strain broth and discard solids.
  2. Cook noodles: Cook egg noodles according to package directions. Drain and set aside.
  3. Prepare toppings: Shred chicken breast and chop green onions and cabbage.
  4. Assemble: Divide cooked noodles into bowls. Top with shredded chicken, green onions, cabbage, fried shallots, and chicken meatballs (if using).
  5. Ladle broth: Ladle hot broth over the noodles and toppings.
  6. Sprinkle seasoning: Sprinkle chicken seasoning powder over the top.
