Ingredients:

  • For the couscous:
    • 1 cup couscous
    • 1 cup vegetable broth
    • 1 tablespoon olive oil
    • 1/4 teaspoon salt
  • For the salad:
    • 1/2 cup chopped cucumber
    • 1/4 cup chopped red onion
    • 1/4 cup chopped fresh parsley
    • 1/4 cup cherry tomatoes, halved
    • 1/4 cup crumbled feta cheese

  • For the dressing:
    • 1/4 cup olive oil
    • 1 tablespoon lemon juice
    • 1/2 teaspoon honey
    • 1/4 teaspoon ground cumin

Instructions:

  1. Cook couscous: Bring vegetable broth to a boil in a saucepan. Add couscous, cover, and let sit for 5 minutes, or until couscous is tender. Fluff with a fork.
  2. Make dressing: In a small bowl, whisk together olive oil, lemon juice, honey, and cumin.
  3. Assemble salad: In a large bowl, combine couscous, cucumber, red onion, parsley, cherry tomatoes, and feta cheese.
  4. Drizzle: Drizzle salad with dressing and toss to coat.
