Ingredients:

  • 12 ounces rice noodles
  • 2 eggs

  • 1 carrot, shredded
  • 1/4 cup bean sprouts
  • 1/4 cup chopped scallions
  • 1/4 cup chopped peanuts
  • 1/4 cup tamarind sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Prepare the Noodles:
    • Soak rice noodles in warm water for 15-20 minutes until pliable but still firm.
    • Drain and set aside.
  2. Make the Pad Thai Sauce:
    • In a small bowl, whisk together fish sauce, palm sugar, tamarind paste, rice vinegar, and chili flakes.
    • Set aside.
  3. Prepare the Ingredients:
    • Chop peanuts, slice green onions, and prepare other ingredients for easy access.
  4. Start the Stir-Fry:
    • Heat 2 tablespoons of oil in a large wok or skillet over medium-high heat.
    • Add minced garlic and stir-fry for 30 seconds until fragrant.
  5. Cook Protein (if using):
    • Add tofu and/or shrimp to the wok.
    • Cook until shrimp is pink and tofu is lightly golden.
  6. Add Eggs to Pad Thai:
    • Push ingredients to one side of the wok.
    • Crack 2 eggs into the empty space and scramble.
    • Mix the scrambled eggs with the other ingredients.
  7. Stir-Fry Noodles:
    • Add drained rice noodles to the wok.
    • Pour the Pad Thai sauce over the noodles.
    • Stir-fry for 2-3 minutes until noodles are soft and well-coated with sauce.
  8. Add Vegetables and Peanuts:
    • Toss in bean sprouts, chopped peanuts, and green onions.
    • Stir-fry for another minute until vegetables are slightly wilted.
  9. Fry the Eggs:
    • In a separate non-stick pan, heat 2 tablespoons of oil over medium-high heat.
    • Crack each egg into the pan and fry until the whites are set and edges are crispy, but yolk is still runny.
  10. Serve and Garnish:
    • Divide Pad Thai between two plates.
    • Top each serving with a fried egg.
    • Garnish with fresh cilantro, extra peanuts, and lime wedges.
    • Serve immediately while the egg is still hot and runny.
