Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 1/2 pineapple, cored and cut into chunks
  • 1/4 cup olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 corn tortillas
  • 1 avocado, ripe and mashed
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. Prepare the marinade: In a large bowl, combine the olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper. Add the shrimp and pineapple chunks and toss to coat.
  2. Grill the shrimp and pineapple: Preheat your grill to medium-high heat. Grill the shrimp and pineapple for 3-4 minutes per side, or until cooked through and slightly charred.
  3. Assemble the tacos: Warm the corn tortillas on the grill for a few seconds on each side. Place a few grilled shrimp and pineapple chunks on each tortilla. Top with avocado guacamole, red onion, and cilantro.
  4. Serve: Serve immediately and enjoy!
