Ingredients:

For the beef:

  • 1 pound beef tenderloin, trimmed
  • 1 tablespoon olive oil
  • Salt and pepper to taste

  • 1 pound mixed mushrooms, sliced
  • 1 head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

For the sauce:

  • 1/2 cup red wine
  • 1/4 cup beef broth
  • 1 tablespoon butter
  • 1 teaspoon Dijon mustard

Instructions:

  1. Prepare the beef: Season the beef tenderloin with salt and pepper. Heat the olive oil in a large skillet over high heat. Sear the beef on all sides until golden brown. Remove from the skillet and let rest for 5 minutes.
  2. Roast the vegetables: Toss the mushrooms and cauliflower with olive oil, garlic, salt, and pepper. Roast in a preheated oven at 400°F (200°C) for 20-25 minutes, or until tender and slightly browned.
  3. Make the sauce: In the same skillet used to sear the beef, add the red wine and beef broth. Bring to a simmer and cook until reduced by half. Stir in the butter and Dijon mustard.
  4. Serve: Slice the beef and serve with the roasted vegetables and sauce.
