Recipe of Spicy Korean Fried Chicken

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • 1 cup milk
  • Vegetable oil for frying
  • 1/2 cup Korean hot sauce
  • Sesame seeds
  • Coleslaw
  • Lemon wedges

Instructions

  1. Prepare the chicken:
    • If using whole chicken wings, separate them into drumettes and flats.
    • Pat the chicken pieces dry with paper towels.
  2. Make the batter:
    • In a large bowl, whisk together cornstarch, flour, salt, black pepper, garlic powder, and onion powder.
    • In another bowl, mix cold water and egg.
    • Gradually add the wet ingredients to the dry ingredients, whisking until you have a smooth batter.
  3. Coat the chicken:
    • Dip each piece of chicken into the batter, ensuring it’s well coated.
    • Let excess batter drip off.
  4. Prepare for frying:
    • Heat vegetable oil in a deep fryer or large, heavy-bottomed pot to 350°F (175°C).
    • Line a plate with paper towels for draining the fried chicken.
  5. First fry:
    • Carefully lower battered chicken pieces into the hot oil, working in batches to avoid overcrowding.
    • Fry for 5-7 minutes, until golden brown and cooked through.
    • Remove and drain on prepared paper towels.
  6. Second fry (for extra crispiness):
    • Increase oil temperature to 375°F (190°C).
    • Fry the chicken pieces again for 2-3 minutes until deeply golden and ultra-crispy.
    • Drain on fresh paper towels.
  7. Prepare the spicy glaze:
    • In a small saucepan, combine all glaze ingredients.
    • Simmer over medium heat, stirring frequently, until the sauce thickens slightly (about 5 minutes).
  8. Coat the chicken:
    • Place the fried chicken in a large bowl.
    • Pour the hot glaze over the chicken and toss gently to coat evenly.
  9. Garnish:
    • Transfer the glazed chicken to a serving plate.
    • Sprinkle with toasted sesame seeds and chopped green onions.
  10. Serve:
