Ingredients:

  • For the salad:
    • 1 cup mixed greens
    • 1/2 avocado, diced
    • 1/4 cup cucumber, sliced
    • 1/4 cup cherry tomatoes, halved
    • 1/4 cup red onion, thinly sliced

  • For the tempeh:
    • 1 block tempeh, pressed and crumbled
    • 1 tablespoon olive oil
    • 1/2 teaspoon cumin
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper

  • For the poached egg:
    • 1 large egg
    • 1 tablespoon white vinegar

  • For the dressing:
    • 1/4 cup olive oil
    • 1 tablespoon lemon juice
    • 1/2 teaspoon honey
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper

Instructions:

  1. Prepare tempeh: Toss tempeh with olive oil, cumin, salt, and pepper. Grill or pan-fry until golden brown.
  2. Poach egg: Bring a small pot of water to a simmer. Add vinegar and gently crack the egg into the water. Cook for 3-4 minutes, or until desired doneness.
  3. Make dressing: In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
  4. Assemble salad: In a large bowl, combine mixed greens, avocado, cucumber, cherry tomatoes, and red onion.
  5. Serve: Top salad with tempeh, poached egg, and drizzle with dressing.
