Ingredients:

For the chicken teriyaki:

  • 1 garlic clove, minced
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil

For the fried rice:

  • 2 cups cooked rice
  • 1 egg, beaten
  • 1 tablespoon vegetable oil
  • 1/2 onion, chopped
  • 1 carrot, chopped
  • 1/4 cup frozen peas
  • Salt and pepper to taste

Instructions:

  1. Prepare the chicken: In a bowl, combine the soy sauce, rice vinegar, honey, ginger, garlic, cornstarch, and sesame oil. Add the chicken strips and toss to coat.
  2. Cook the chicken: Heat a large skillet over medium-high heat. Add the chicken and cook for 3-4 minutes per side, or until cooked through. Remove the chicken from the skillet and set aside.
  3. Make the fried rice: Heat the vegetable oil in the same skillet. Add the beaten egg and scramble until cooked. Add the onion, carrot, and peas and cook for 2-3 minutes, or until the vegetables are tender. Stir in the cooked rice and season with salt and pepper.
  4. Combine and serve: Return the cooked chicken to the skillet and toss with the fried rice. Serve immediately.
