Ingredients:

  • 1 garlic clove, minced

Instructions

  1. Prepare Teriyaki Sauce:
    • In a bowl, mix soy sauce, mirin, brown sugar, ginger, and garlic.
    • Set aside half for later use.
  2. Marinate the Chicken:
    • Combine chicken pieces with half of the teriyaki sauce.
    • Marinate for at least 30 minutes (or up to 2 hours in the refrigerator).
  3. Cook the Rice (if not already prepared):
    • Cook rice according to package instructions.
    • Spread on a baking sheet to cool completely.
  4. Cook Teriyaki Chicken:
    • Heat 1 tablespoon oil in a large skillet over medium-high heat.
    • Add marinated chicken and cook for 6-8 minutes until browned and cooked through.
    • Pour in the reserved teriyaki sauce and simmer for 2-3 minutes until sauce thickens.
    • Remove chicken from skillet and set aside.

    • Push vegetables to one side of the skillet.
    • Pour beaten eggs into the empty space and scramble until set.
  8. Fry the Rice:
    • Add cooled rice to the skillet.
    • Stir-fry for 3-4 minutes, breaking up any clumps.
  9. Season the Rice:
    • Add soy sauce and sesame oil.
    • Toss everything together until well combined and heated through.
  10. Serve and Garnish:
    • Divide fried rice among plates.
    • Top with teriyaki chicken.
    • Garnish with sliced green onions.
