Recipe of Dumplings

Ingredients:

  • 2 lbs (900g) potatoes, peeled and grated
  • 1 lb (450g) ground pork or beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 2 tablespoons flour
  • Salt and pepper to taste
  • 4 slices bacon, chopped
  • 1 small onion, finely diced (for topping)
  • Sour cream (for serving)
  • Fresh dill (optional, for garnish)

Instructions:

  1. Prepare the Potato Mixture:
    • Peel and grate the potatoes into a large bowl.
    • Place the grated potatoes in a cheesecloth or clean kitchen towel and squeeze out as much liquid as possible.
    • Transfer the drained potatoes to a mixing bowl, add the egg, flour, and a pinch of salt. Mix until well combined.
  2. Make the Filling:
    • In a separate bowl, combine the ground meat with the finely chopped onion, minced garlic, salt, and pepper.
    • Mix thoroughly to create the filling for the dumplings.
  3. Form the Dumplings:
    • Take a handful of the potato mixture and flatten it into a patty in your hand.
    • Place a spoonful of the meat filling in the center of the patty, then carefully shape the potato mixture around the filling, forming an oval-shaped dumpling.
    • Repeat with the remaining potato mixture and filling.
  4. Cook the Dumplings:
    • Bring a large pot of salted water to a gentle boil.
    • Carefully place the dumplings into the boiling water, making sure they don’t stick together.
    • Cook for about 25-30 minutes until the dumplings are firm and cooked through.
  5. Prepare the Bacon Topping:
    • While the dumplings are cooking, fry the chopped bacon in a pan over medium heat until crispy.
    • Add the finely diced onion to the bacon and cook until the onion is soft and golden brown.
  6. Serve:
    • Once the dumplings are cooked, remove them from the pot using a slotted spoon and place them on a serving dish.
    • Top the dumplings with the crispy bacon and onion mixture.
    • Serve hot with a generous spoonful of sour cream and garnish with fresh dill if desired.
