    • 8 corn tortillas
    • 1 red bell pepper, sliced
    • 1 yellow squash, sliced
    • 1 zucchini, sliced
    • 1/2 cup black beans, rinsed and drained
    • 1/4 cup chopped cilantro

  • For the avocado crema:
    • 1 ripe avocado, mashed
    • 1/4 cup Greek yogurt
    • 1 tablespoon lime juice
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper

Instructions:

  1. Grill vegetables: Grill or pan-sear red bell pepper, yellow squash, and zucchini until tender-crisp.
  2. Make avocado crema: In a small bowl, combine avocado, Greek yogurt, lime juice, salt, and pepper. Stir well.
  3. Warm tortillas: Warm tortillas on a griddle or skillet for 30 seconds per side.
  4. Assemble tacos: Fill tortillas with grilled vegetables, black beans, and cilantro. Top with avocado crema.
