Ingredients:

  • For the pasta:
    • 1 pound dried pappardelle pasta
    • 1 tablespoon olive oil
    • Salt and pepper to taste

    • 1/2 cup butter
    • 1/2 pound mixed wild mushrooms, sliced
    • 1 shallot, finely chopped
    • 1/4 cup heavy cream
    • 1/4 cup freshly grated Parmesan cheese
    • 1 sage leaf
    • Salt and pepper to taste

Instructions:

  1. Cook pasta: Cook pasta according to package directions. Drain and set aside.
  2. Make mushroom sauce: In a large skillet, melt butter over medium heat. Add shallots and sauté until softened. Add mushrooms and cook until browned.
  3. Add cream and Parmesan: Stir in heavy cream and Parmesan cheese. Season with salt and pepper.
  4. Toss pasta: Add cooked pasta to the mushroom sauce and toss to coat.
  5. Garnish: Garnish with a sage leaf.
